I replace the shock oil at least two times per race. For example, before practice, and then again before the main final. Especially the rear shocks require regular maintenance since the oil will attract some dirt and dust, which will pass through the o-ring into the shock.
As for the diff oils, I know some team drivers who can run the whole racing season without a rebuild, and the diff will perform equally well as with new oil. Personally I prefer to put new oil for every race since new oil is always better no matter what, same goes for shocks - fresh oil always has more traction. Since the gear diffs will leak slightly depending on the condition of the o-ring, it will be necessary to refill them after a while anyway.
