Because droop determins how weight is transfered on the chasis. For example, if you limit the droop on the front end (arms more parallel) then on power coming out of a corner less weight is transfered to the rear of the chasis keeping more weight twards the front giving you more on power steering. It works the same for the rear, Ex. if you limit the droop to the rear end less weight will transfer to the front giving the car less steering at corner entry. Also droop can help on tracks that have alot of quick directional changes so the chasis has less roll making the car feel like its more reactive instead of sluggish.
You have to find the happy medium though because you can go to far either way, less/more droop. Its a great tunning option so I recomend playing around with it.
Its a tunning option that will give you immediate results and you will feel the difference.
Hope this helps
