The way I see it is that more chassis roll = more grip, but not necessarally the fastest car.
If you have lots of roll you will have a lot of grip, but when the car lets go it does so very quickly, and you have no chance of catching it. As mentioned above, corner speed is reduced and so is the car's ability to change direction quickly in chicanes, but it can feel easy and "safe" to drive.
Less chassis roll will give less grip, but the car will tend to drify or slide more gently and it can be caught more easily. It gives more corner speed and it can change direction really easily. Good for tight tracks.
For carpet and foams, have a stiff setup and cut that chassis roll.
