Whats best to change / do when your car performs well on new tyres but on the 2nd / 3rd run it dies off?

Try changing the tyres

The loss of steering for older tires can be compensated for by minor set-up changes. For instance you can try more droop, offset, or stiffer springs.

A rule of thumb is also to use a thin type of tire additive for the first run and an oily type as the tires are older.
