If you build it correctly to make sure it doesn't leak, then you don't have to re-build it more often than every month or so (just to clean out any metal shavings from the gears and dirt that came through the cup o-rings. I always use a new large o-ring gasket when re-building them and they've never leaked since doing this. The gaskets are pretty cheap for 10.
Once you build it once, kind of get a feel for how much pressure it takes to rotate the diff action. Then just check it before and during each race day to see if it feels like its rotating faster with less effort. If it is, then a re-build is needed.
